Potato a la huancaína recipe

4 large potatoes
2 Yellow pepper
100 milliliters of milk
½ Lemon
3 soda crackers
100 grams of fresh cheese
1 dash of olive oil
1 pinch of Salt and Pepper
How to make Papas a la huancaína:
Before making this Peruvian recipe, the first step is to get all the ingredients ready.
The original recipe for potatoes a la huancaína is made with rocoto, a variety of pepper or chili, widely used in recipes of the gastronomy of Peru and Chile.
To cook the peppers, first we cut them in half, remove the seeds and place them in a saucepan with water. Heat until the water boils and keep for about 5 minutes.
After this time, we strain and repeat the procedure with new water about three times. This is done to remove some of the heat from the peppers.
Next, blend the chili peppers with the milk until they form a paste.
To continue with our huancaína sauce, add the cheese cut into the pieces and blend everything again until a homogeneous mixture is formed.
Finally add the soda crackers and blend for a few minutes. The result should be a smooth and homogeneous mixture.
Rectify the flavor with salt, pepper, a few drops of lemon juice and a little olive oil.
On the other hand, we cook the potatoes in boiling water for 30 minutes or until slightly soft. It is important that the potatoes are not too soft, the idea is not to make a mashed potatoes but simply to cook them until they are done.
When they are ready, drain, peel and cut into thick slices.
